Gajar Ka halwa

- 2 cup grated red carrots
- 3 tbsp unsalted butter
- 3 cup - milk
- ¼ - cup raisins
- ½ - cup
- 100 gms mawa (khoya)
- ½ cup - cashew & almonds for Garnishing
- ½ tsp cardamom powder
Preparation
- Roast the cashew nuts and set aside for the garnish.
- Heat the Ghee (clarified butter) in a non-stick pan on medium heat.
- Add the grated carrots and stir-fry for about seven to eight minutes.
- Carrots should be tender and slightly changed in color.
- Add the milk and cook until almost dry. Add sugar and stir well till the sugar is dissolved.
- Add the raisins and cashew nuts. Keep stirring continuously, otherwise the mixture will stick to the bottom.
- Stir until semi dry. Add mawa and mix well.
- Cook until the Halwa leaves the sides of the pan and ghee separates from the Halwa.
- Garnish with cashew nuts.
