Ingredient list

  • 4 potato cut into cubes
  • 1 onion chopped
  • 1 Bay Leaf
  • 1 inch finely chopped ginger
  • 2 sliced lengthwise green chili
  • ½ tsp panch phoron ( consists of fenugreek seed, onion seed (मंग्रैल / कलौंजी), cumin, black mustard seed and fennel seed in equal parts)
  • ½ tsp red chili powder
  • 2 chopped tomato or puree
  • ½ tsp turmeric powder
  • 2 Whole red chili
  • Salt to taste
  • 1 bunch chopped coriander
  • 2 cups water

Preparation

  • For seasoning: Heat oil. Add panch phoron, bay leaf and whole red chili. Saute for 30 seconds.
  • Add ginger, green chili and onion. Saute till it get golden brown.
  • Add chopped tomatoes,  salt and sugar. Saute till it leaves oil and get tender.
  • Add potato, salt, turmeric powder & red chili powder. cook for a few minutes.
  • Add water and cook till potatoes are cooked properly and gravy just thickens.
  • Remove from heat. and garnish with coriander leaves
